Chicken Cafreal

with frango à cafreal masala

What you need; 

  • Chicken boneless: 400g
  • Onion: 1 small
  • Potato Wedges: From 2 medium potatoes.
  • The Women of Goem Frango a Cafreal masala: 3-4 tbsps
  • Lime Juice: 2 tbsps
  • Unsalted butter 20g
  • Curry leaves for garnish
  • Salt to taste
  • Cooking oil (coconut oil is traditional, but you can use any oil)

1. Marinate the chicken with Frango a Cafreal masala.

2. Slice the onion finely.

3. Add 2-3 tsps of oil in a frying pan.

4. Add 10g of the butter.

5. Do not let the butter turn brown.

6. Add the chicken pieces. Fry for a minute.

7. Turn the side when it turns golden brown.

8. Fry for a minute.

9. Remove from the pan.

10. Let it rest.

11. Add 2-3 tsps of oil in a wok.

12. Add the onion.

13. Saute them until they turn translucent.

14. Add the rest of the Frango a Cafreal masala.

15. Stir well.

16. Add half a tsp of salt.

17. Add the chicken with the oil.

18. Mix them throughly with the gravy.

19. Fry for 3-5 minutes.

20. Switch off flame. Add the curry leaves.

21. In a fry pan, heat some oil.

22. Add the remaining butter.

23. Place the potato wedges and fry

24. Turn them over until all sides are golden brown.

25. Remove from pan.

26. Adjust the salt, add more butter if you like.

27. Transfer to a bowl.

28. Serve the Chicken Cafreal with the potato wedges.
