with mori ambotik masala

What you need:

  • Mori cut to bite sized pieces: 300g
  • Onion: 1 large
  • The Women of Mori Ambotik masala: 2-3 tbsps
  • Tamarind (Kokum or malabar tamarind) : 2-3 pieces.
  • Green Chillies (optional): 2
  • Curry leaves for garnish
  • Salt to taste
  • Cooking oil (coconut oil is traditional, but you can use any oil)

Clean and marinate the mori with turmeric, salt, pepper and lime juice. Keep for at least an hour.

Finely chop the onions.

Heat 2 tbsps of oil in a cooking vessel.

Add the chopped onion.

Saute well for 2 to 3 minutes.

Or until the onions turn lightly golden brown.

Add 2-3 tsps of the Mori Ambotik masala.

Fry under low flame

Add a few tbsps of water for better mixing

Once the oil separates, add a cup of water.

Mix well.

Add 2-3 pieces of Kokum or tamarind.

Adjust the salt.

Stir Well.

Bring the mixture to boil.

Add the Mori pieces.

Mix well with the gravy.

Cook closed for 3 to 4 minutes

Preferably under a low to medium flame.

Check the amount of gravy according to your preference.

Make sure the mori is cooked.

Transfer to a bowl.

The Mori Ambotik is ready.

Serve with hot rice or roti.
