Pork Vindaloo

with Vindaloo de Goa masala

What you need; 

  • Pork cut in cubes: 250g
  • Onion: 1 large
  • The Women of Goem Gavli Vegetable masala: 2-3 tbsps
  • Green Chillies (optional): 2
  • Curry leaves for garnish
  • Lime juice: 2 tsps
  • Salt to taste
  • Cooking oil (coconut oil is traditional, but you can use any oil)

1. Season the pork with salt and lime juice.

2. After 10 minutes, marinate with the Vindaloo de Goa masala.

3. Keep for at least an hour. Overnight is best.

4. Finely chop the onion.

5. Heat 3-4 tbsps of oil in a pot.

6. Add the onion.

7. Fry for 3-4 minutes Until they turn slightly brown.

8. Add the marinated pork.

9. Mix well with the onion.

10. Add half a cup of water.

11. Stir well.

12. Add some curry leaves.

13. Check the heat and add the chillies if needed.

14. Cover and cook until the pork is cooked.

15. Transfer to a bowl.

16. Serve hot with rice or bread.
