What you need –
- Prawns: 300g
- Onion: 1 medium
- The Women of Goem Green Recheado masala: 2-3 tbsps
- Green peas: 100g
- Unsalted butter: 10g
- Curry leaves for garnish
- Salt to taste
- Cooking oil
Marination: Marinate the prawns with our Green Recheado masala and keep it for at least 30 to 45 minutes. Mix some corn starch and baking soda if you want the prawns to be crispy on the outside.
Boil the green peas until they are half cooked.

Sangita Naik
The recipe of the classic Goan dish Prawns with Okra is from Sangita Naik from the Hindu community of Marlem, an area of Fatorda, and is almost a daily fare in her family. This recipe is handed down to her from her grandmother.

1. Heat oil in a wok.

2. Saute the onion.

3. Fry until soft.

4. Add the prawns.

5. Stir well, and toss.

6. Cook until prawns start to change colour.

7. Add half cooked green peas.

8. Stir well, toss until prawns are cooked.

9. Switch off fire. Add fresh curry leaves.

10. Add 10g of unsalted butter.

11. Toss to spread the butter evenly.

12. Serve hot as starter or with bread.
