Velha Goa or Old Goa has been historically a very significant part of Goa where Adil Shahis of Bijapur had their ancillary capital. As the Muslim community evolved, their cuisine also became more sophisticated, as multiple culinary streams intermingled to create a distinct, unique, Goan style. Our masala for mutton, with its own characteristic flavour and aroma, is a recipe descended from this ancient muslim community of Goa.
